I am sure you know by now that I buy most things from Trader Joe's or Aldi (if either is near). The ready to eat salads are the best way to keep your budget down (cheaper to buy ready to eat vs. each separate ingredient) while being health conscious and embracing variety. Kale & Califlower Curry Salad
Now...I'm not saying that this amazingly delicious salad was not tasty on it's own because it was! It has a slight kick, however the cauliflower and kale were still crisp. I cannot rave enough about the salads that Trader Joe's sells. At such a reasonable price (most are 3.99 and feed two) it takes the guess work out of budgeted lunches. Also, the variety (some with meat and some without)means you never get stuck in a rut!
I added the walnut pieces (also from TJ's) and dried cranberries which are usually from TJ's. This year they are from Sprouts and purchased in bulk. These two ingredients are super foods in so many ways.
Cranberries are a great source to receive vitamin E, C, and K. They also provide dietary fiber, manganese (prevent weak bones, anemia, and PM's), copper, and pantothenic acid (to metabolize proteins, carbs, and fats).
