Ice Cream Cupcakes made easy....

A few days ago, while shopping for Myles' birthday dinner, Baby Girl asked if we could make ice cream cupcakes. When a (reasonable) request comes, I try to make it happen. Now, with my new dietary restrictions, I had to think outside the box. We typically buy everything from Trader Joe's, and I knew that they would have what I needed. So, here is the list of ingredients, and I will walk you through how I made these goodies!

Box of chocolate cake mix (makes 24 cupcakes)
Box of vanilla frosting
2 sticks of butter
3 eggs
Hot water
Room teperature water
Food coloring (must have the frosting the shade of his Pokeman character!)
Quart or gallon zip lock bag (you will be cutting off an edge to frost the cupcakes)
Sprinkles
Mixer/Mixing bowls
Measuring cup

Ice cream (whatever flavor suits your fancy)...I used soy vanilla

*The instructions on the box are SUPER simple, and the ingredient list is small with words I can actually pronounce!*

I followed the instructions on the box for the cake mix.  Once the first batch was done, I place them on the cooling rack for 15 minutes, then in the fridge for another 10. While they were cooling, I made the frosting, and placed it in the fridge to thicken for about five mintues or so. 

I removed the soy vanilla ice cream from the freezer to allow enough time for it to be a consistency I could work with.  After that, I removed them and cut out the center with a vegetable peeler (ALWAYS helps when you can use what you already have at home!). With a teaspoon, I scooped the ice cream and used my hands to stuff it into the cupcakes.  ***WARNING...your hands will get cold!*** I then frosted them, Baby Girl added sprinkles, and we placed them in the freezer.

The same steps were used on the second batch (minus the two out of the oven that the kiddos ate!).  Because I used so much frosting on each cupcake, I unfortunately ran out!  After a quick search, I melted dark chocolate chips, frosted and sprinkled the remaining cupakes, and added them to the freezer.
